So sorry for the double post, I accidentally published before I even typed the post. I'm a winner. :)
I wanted to share a recipe with you today. I have been craving crepes like crazy and so last week I decided to make some. They are easy and delicious. I made these for an after school snack for my son and they were an immediate hit! Here is the recipe...
Simple Crepes
by Martha Stewart
1 c flour
1 T sugar
1/4 t salt
1 1/2 c milk
4 eggs
3 T melted butter
(I also added 1 T vanilla)
In a blender, combine flour, sugar, salt, milk, eggs, and butter. Puree until mixture is smooth and bubbles form on top, about
30 seconds. Let batter sit at least 15 minutes at room temperature (or
refrigerate in an airtight container, up to 1 day; whisk before using). Heat a 12-inch nonstick skillet over medium. Lightly coat
with butter. Add 1/3 cup batter and swirl to completely cover bottom of
skillet. Cook until underside of crepe is golden brown, 2 to 3 minutes. Loosen edge of crepe with a rubber spatula, then with your
fingertips, quickly flip. Cook 1 minute more. Slide crepe out of skillet
and repeat with remaining batter. (Coat pan with butter as needed.
I don't have a blender right now so I just used a whisk.
I also don't like cooking these in a skillet. Mine always get stuck and I can't flip them so I make mine on my griddle. (I know that is probably a authentic crepe no-no...but they taste the same to me and are so much easier! Plus, I can make more at a time. :)At this point you can add whatever fillings or toppings you want.
I usually just eat them with butter and sprinkled powdered sugar but I decided to add a little something to them. Adding strawberries makes them healthy right?
And maybe some whipped cream?

DeleteHi! I absolutely LOVE Crepes! I love making tons of them and then having them in a little plate and eat one or two while I'm chilling at home! Actuall,y I think I never got any with whipped cream and strawberries.. I know.. crazy! May make them tomorrow! thanks for the idea!
