Chicken Salad Croissants

Today I am sharing the recipe for one of my MOST favorite summertime foods, Chicken Salad Croissants.
Chicken Salad Croissants
3 C. Diced cooked chicken
1 1/2 C. diced celery
3 T. Lemon Juice
1 C. apples (diced)
1 C. Crushed pineapple or sliced grapes (whichever you prefer)
1 C. slivered Almonds
1 C. Lettuce
Croissants (I prefer small size)

SAUCE:
1 C. Miracle Whip
1 tsp. salt
3/4 tsp dry mustard

First off, cook chicken and dice all ingredients. Add lemon juice to diced apples to keep them from going brown. Put chicken, fruit, veggies, and almonds in bowl. Mix sauce separately then add to salad mixture. Serve on croissants and enjoy! (If you're not serving them all at once, just mix sauce in to the amount of salad as you go. It should keep for a couple days.)

Dill Veggie Dip

 As the weather gets warmer (even though it snowed yet again last night!), I thought I would share my favorite veggie dip of all time! I am a little particular when it comes to veggie dips, I will not eat dips from the store. I just don't like them...and I am NOT a fan of ranch dressing so it leaves me only a few options. Fortunately, my family always made this homemade Dill Veggie Dip and I love it. I hope you do too!

Crepes

So sorry for the double post, I accidentally published before I even typed the post. I'm a winner. :)
I wanted to share a recipe with you today. I have been craving crepes like crazy and so last week I decided to make some. They are easy and delicious. I made these for an after school snack for my son and they were an immediate hit! Here is the recipe...

Perfect Pecan Pie

Today I am sharing one of my favorite recipes. (I so meant to post this last week...but time got away from me...oops!) A crowd pleaser for sure! This is so delicious served warm with a scoop of vanilla ice cream. To Die For! I am putting the recipe below and it is super easy. I usually hate pie crust, but ever since I found this recipe I am hooked. It is sooo yummy and flaky. I rolled out 1 crust and used the rest of the dough to cut out these cute leaves to adorn the edge of the pie crust(recipe makes 2 pie crusts). Soooo cute! I got this cutout in a set from Williams sonoma and they are awesome. I hope you try this out this holiday season, you won't be disappointed!

Homemade Pretzels & Pretzel Bites {Recipe}


 I can't wait to share this yummy recipe and tutorial with you all! Its been a long time right? Now that things seem to be settling down I am excited to be back and have lots of fun things to share. I am working with a blog designer to update my blog and I am pretty excited about that. Not to mention I finally got around to setting up a facebook page and twitter where I will post updates and fun things I am working on. I would love it if you stopped by! Now back to this delicious recipe. :)
 Homemade Pretzels and Pretzel Bites:

Ingredients
  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 2 ¼ tsp or 1 package active dry yeast
  • 4 ½ C all-purpose flour
  • 2 ounces butter, melted
  • Vegetable oil, (for bowl)
  • 10 cups water
  • 1/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Kosher salt to sprinkle on top
Directions
Combine the water, sugar and 2 tsp kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour and butter and, using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately an hour or until the dough has doubled in size.
Preheat the oven to 450 degrees F. Line 2 pans with cooking spray. Set aside.
Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan or roasting pan.
For Pretzels: In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces.
 Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place greased pan.



 For Pretzel Bites: Separate and roll dough out as explained above, but instead of shaping as a pretzel, use a pizza cutter to cut the rolled dough into “bites”. Place on cookie sheet.


 Place the pretzels and/or bites into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. The baking soda really makes the boiling water foamy!
 I took a cooling rack and set it on a separate cookie sheet so that when you take out the wet pretzels out of the water they can drip off while you coat them with egg and kosher salt for baking.
 After they are not dripping, return them to the half sheet pan you initially greased and bake until dark golden brown in color, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving. Enjoy!

Healthy Soup

I thought I would share one of my favorite winter go-to soups. I think it is savory, delicious, and healthy! Perfect for those of us who want something yummy, filling, and easy on the waistline. (only 3 ww points per cup!)

Minestrone Soup
2 Tbsp Olive Oil
1 tsp dried basil
1 tsp dried oregano
1 Tbsp garlic salt
3 Tbsp Parsley flakes
2 C. chopped celery
1 C. chopped carrots
1 C. chopped potatoes
8 oz. can tomato sauce
1 can cannellini beans
1 c. cooked shell pasta
4 cans chicken broth or stock (add varying amount depending on how long you simmer and how thick you like it)
Start heating olive oil and spices in skillet. Add celery, carrots, and potatoes and some chicken broth and let simmer covered until veggies start to soften. (add chicken stock/broth as needed). Meanwhile, cook pasta and strain setting aside.
After veggies have simmered, add tomato sauce and more chicken broth.Simmer for about 5 minutes.
 
Add beans and pasta to veggie mix and add the rest of the chicken broth/stock as necessary. Bring to a low boil and then put soup mix into crock pot to simmer on low. Makes about 11- 1 cup servings. (only 3 weight watcher points per cup)

Spider Web Cookies

The other night we decided to make some spider web cookies. They are kind of fun.
Here is the recipe.
INGREDIENTS:
1 cup butter
1 cup confectioners’ sugar
2 1/4 cups flour
1 egg
1 tsp lemon zest
1 bag of chocolate chips (I only used like 1 1/2c. or so)


Preheat the oven to 375 degrees and line a few baking sheets with foil. Beat butter and confectioners’ sugar on medium speed until creamy, for about 2 minutes. Beat in flour, egg and lemon zest until a dough forms. (I think I should have added a little more flour because my web didn't hold its shape quite as well)
 
Fill a pastry bag fitted with a large round writing tip with the dough. Spoon the dough inside the cuff. Twist and start to squeeze down. (I did not have the right size tip, so after I attempted to use a smaller tip with this thick dough stupid idea I took off the tip, sorry no pic of this part, and just pushed it through the coupler itself since that is all I had. This made our spiderweb cookies a little too large. I will be for sure buying a large round tip next time I go to the store.)
Squeeze a + sign about four inches long and wide onto the baking sheet. On top of that + sign, pipe an x starting from the center. Now you have something that looks like a star. Now connect the lines that you piped with web circles to create a web. Add another web part to connect the insides. Put 4 on each tray. My son had fun making his blob"web".
Bake cookies until set but not yet browned, about 8 minutes until lightly golden. Microwave chocolate chips into glass bowl at 50 percent for 30 seconds at a time. Fill a small Ziploc plastic bag with chocolate chips and seal it up. Squeeze as much as you can into one corner.
 
Take cookies out when ready. Let cookies cool 5-6 mintues before transferring to wire rack to cool completely. They are very fragile, so be careful transferring them! Snip off one corner of the bag with scissors. (Be sure to just cut the tiniest bit of plastic at the corner, the melted chocolate comes out fast and it can be difficult to make the legs if you have it coming out to fast and too much. You can always cut more, but you can't go back and add more plastic!)Use the melted chocolate as the “glue” that will help you attach a chocolate chip on top of web.
Use the melted chocolate to pipe on 8 little spider legs on either side of the body.
